If I retook a class for a better grade, will my final grade be the average of both grades together?

We do not do grade replacement here at UT. There are very few circumstances where a student should retake a class. If you retake a class and earn a better grade then it will not change the previous grade that you earned at all. A better grade would factor into your overall UT GPA just like any other course.
