Renowned Mexican chef Roberto Santibañez explores the vibrant street food of Mexico, speaking about traditional recipes and modern adaptions of Mexican cuisine. In his engaging lecture, Santibañez will delve into the different ingredients, flavors, and techniques that make Mexican street food unique and an integral part of Mexican culture.
Originally from Mexico City, Roberto Santibañez has a culinary career that spans Mexico, Europe, and the United States. His experiences include working as the chef-owner of El Sax, La Circunstancia, and Restobar Salamandra in Mexico City, the Executive Chef of Fonda San Miguel in Austin, TX, and the Culinary Director of Rosa Mexicano in New York. Currently, Santibañez is the owner of Fonda, a restaurant with Brooklyn and New York locations, acclaimed for its contemporary Mexican cuisine. Santibañez is also the author of three cookbooks: Rosa’s New Mexican Table (2007), the award-winning Truly Mexican (2011), and Tacos, Tortas and Tamales: Flavors from the Griddles, Pots, and Streetside Kitchens of Mexico (2012).
