Introductory Nutrition

Introductory Nutrition is a survey course covering basic facts and principles of nutrition. The essential food components and their functions in basic biological processes are covered. Information will be provided about carbohydrates, fats, proteins, vitamins and minerals....their digestion, absorption, transport and metabolism, their sources in foods, effects of deficiency or excess, and the biological roles they play in the body. Issues of current public concern such as nutrition and disease, the role of nutrition in diabetes, coronary heart disease, cancer, and obesity; the proper role of calcium in the prevention of osteoporosis; eating disorders and vitamin-mineral supplementation will also be addressed. An understanding of basic nutrition and basic biological processes should help an individual to critically evaluate the role of nutrition in promoting better health.
